This new space, located in its traditional store on Calle Argensola, offers desserts and other gastronomic creations made from cheese that add to an offer of more than 300 varieties of this artisan product. Most of them are already available in its renewed online store, www.poncelet.es
This March 27, International Cheese Day, Poncelet has unveiled his new project in the Justicia neighborhood (Madrid). The store and tuning center, opened in 2004, has inaugurated this 2023 a workshop integrated into its traditional space on Calle de Argensola. To its offer of more than 300 varieties of cheese from ten European countries, there are now desserts and other gastronomic creations made from this product that defines the essence of the brand. It is a project led by the team of Yolanda Segura and Chef Carlos Sierra, who in 2021 received the award for the Best Cake in the Community of Madrid from ACYRE, the hoteliers association. Motivated by this recognition, they decided to unify the experience around cheese in a single space: their first store in the capital, which has a history of 19 years in the sector. Parallel to and adapted to the digital transformation, Poncelet has decided to undertake also the renewal of its online store, www.poncelet.es. Through this channel they seek to offer a selection of their wide variety of products, but also to expand knowledge of the world of cheese among the Spanish population: “On this new website we tell you everything about each cheese: in which region it is made and through which processes, how long it matures, the processes applied at the Poncelet Refining Center, the awards or mentions it has received, its nuances of flavor, aroma or even with which drinks to pair them”, commented Yolanda Segura, founder of Poncelet.Since 2004 In the words of Yolanda Segura, one of Poncelet’s main objectives has been “to value the work of the cheese factories with which he works and the importance of the artisan trade”. In November 2022, the guild returned this recognition, naming her a member of the Guilde des Fromagers. The mission of this international cheese makers association is “to promote the nobility of dairy products and the trade”. In the Poncelet cheese offer, both in its physical store and online, you can find products from ten European countries, including they Spain, France, Italy, Portugal, Switzerland, Sweden, United Kingdom, Belgium, Ireland and the Netherlands. In addition, these are classified according to their type, animal origin, intensity and maturation to adapt to all kinds of tastes. These include cheeses with Protected Designation of Origin (PDO), Protected Geographical Indication (PGI) and those that have received an award from the cheese community in recent years. To complete this vision of the world of cheese in Europe, currently Poncelet organizes two tastings a month for small groups of about eight people. On these occasions, the team proposes combinations between cheese and other artisan products to continue bringing the population closer to this ancient trade.
