Totó, the benchmark restaurant for Italian cuisine in Madrid, celebrates Disaronno Day on April 19 with a special menu created by chef Emiliano Celli

Madrid, April 18, 2023.- April 19 is the World Day dedicated to Disaronno, the best-selling Italian liqueur in the world that has inspired the prestigious chef Emiliano Celli of the Totó restaurant to create a pairing menu that celebrates a planetary icon of Made in Italy. From April 17 to 30, at number 38 Paseo de la Castellana, lovers of cuisine from the transalpine country will be able to embark on a gastronomic journey through the classic flavors of the Italian cuisine, combined with three Disaronno-based cocktails. The restaurant of the MABEL Hospitality group, which is also the owner of the TATEL group with offices around the world, was born with the purpose of evoking the Made in Italy creativity that flourished in Italy between the years Fifty and Sixty, decades during which the legend of Disaronno, the Dolce Vita liqueur, could be forged. La Dolce Vita at Emiliano Celli’s table The menu dedicated to Disaronno Day is the opportunity to get to know Emiliano Celli’s cuisine, in which the familiar flavors of tradition triumph, where there is no shortage of popular products such as Lambrusco and Prosecco that accompany along with the mythical almond liqueur, emblematic recipes such as ‘Spaghettone alla amatriciana’ and suplí al teléfono, a typical dish of Roman gastronomy. Lambrusco is also the unexpected ingredient in one of the three cocktails featured on the pairing menu for Disaronno Day. The Sour Emilia that accompanies the starters, combines the tradition of Emilia Romagna, land of birth of Lambrusco, with the almond liqueur icon of Lombardy tradition, lands that can boast of culinary excellence. The reasons for the myth Disaronno In 1525 Bernardo Luini , a disciple of Leonardo da Vinci, is commissioned to carry out the fresco of the Virgin of Miracles for the city of Saronno. The painter chose a young local innkeeper as his model, who to show her gratitude gave him an amber-colored drink. 75 years later, in 1600, this recipe was discovered by the Reina family, but it was not until the dawn of the 20th century when the descendant Domenico Reina decided to turn the recipe into the product that is known today. It is in 1947 when the historic establishment ILLVA Saronno Holding was born, turning a purely artisanal activity into a true industry that would make Disaronno, throughout the Sixties, a planetary icon of the Italian Dolce Vita. About TOTÓ TOTÓ is the new project of MABEL Hospitality, a subsidiary of MABEL CAPITAL -also owner of the TATEL group- founded by Manuel Campos Guallar, Abel Matutes Prats and Rafael Nadal and which has, among others, partners such as Cristiano Ronaldo, Pau Gasol and Rudy Fernández.
