Beat the egg yolks in a stand mixer on high speed. Meanwhile, put the water and sugar in a saucepan and heat to 121°C. Then, with the whisk moving, pour the syrup into the beaten yolks. Continue beating until the mixture cools and set aside. In another bowl, beat the mascarpone with the cream until soft peaks form and then combine the two mixtures, stirring with the whisk from the bottom up; Fill a pastry bag with the resulting cream. Prepare the syrup to dip the biscuits by combining the orange juice and Cointreau. Create individual portions alternating the creamy mixture and the biscuits (they should be slightly soaked). Finally, garnish with dark chocolate shavings and dried orange pieces.
