Legend has it that Bess Truman made Harry happy with this one. It’s sugar-shocked and best served with modifiers like ice cream, whipped cream and berries. Think of it as a walnut pie without the crust. (You can use pecans, too.) It’s not pretty but the texture is the pleasure: nuts, bits of apple, meringue-like crust and gooey center. And it’s really easy to make with kids or other non-cooks.

Bess Truman’s Ozark Pudding
Makes 4- 6 servings

1 egg
3/4 cup sugar
2 tablespoons flour
1 1/4 teaspoons baking powder
1/8 teaspoon salt
1/2 cup chopped nuts
1/2 cup raw apple, grated (Granny Smith or Gold Rush)
1 teaspoon vanilla
Cook’s notes: A standing mixer makes this a breeze. Expect the puffy batter to triple in volume, and then flatten out.
Heat oven: to 325 degrees.
Make batter: Mix flour, baking powder, salt, and whisk until evening blended. Set aside. Beat egg and sugar a long time until very smooth and lemony looking. Add apples, nuts and vanilla and mix. Stir in flour mixture.
Bake: Pour neatly into the buttered pie pan and bake for 40 minutes.
Serving: Serve with whipped cream or ice cream, and lots of berries.
