Al pastor, Paloma Blanca Mexican Cuisine. If you’re going to build al pastor tacos on the plancha instead of a trompo rotisserie, this is the way to do it, with tender pork painted achiote orange and saturated with fresh pineapple on handmade corn tortillas.

El San Luis Mexican Restaurant: A line of cars extends to the street at El San Luis’ unlikely drive-through. They’re in line for breakfast tacos at three for $2.99 before 10 a.m. Best taco: Carnitas. 4455 Walzem Road, 210-564-0644, elsanluis.com
Adelante: Since 1981, this colorful bohemian cafe has been proving that vegetarian can be beautiful and turkey can play picadillo if it has to. Is it al pastor from a gnarled trompo or huevos and beans off a dirty grill? Of course not. And that’s OK. Best taco: Veggie. 21 Brees Blvd., 210-822-7681, adelanterestaurant.com
Papa Gayos: Camo and combat boots are good omens at a taquería. Soldiering is hungry work, and value’s a top priority. That’s true at Papa Gayos, where the tables abound with service members, homemade tortillas, fresh salsas and hot plates. Best taco: Alambre. 2470 Harry Wurzbach Road, 210-824-1718, no web presence
Paloma Blanca Mexican Cuisine: Not so much a Mexican restaurant as a posh Mexican country club, Paloma Blanca is a place to party like a peasant in the palace of a king during happy hour, with $5 al pastor tacos, queso and cold margaritas. Taqueria Cazadores: A one-stop shop for breakfast, lunch, dinner and day-drinking. The 10-page menu covers everything from bean and cheese tacos to enchilada plates to ceviche and whole fish to passion fruit margaritas. Los Compadres Cafe: The sign at this cash-only dive hangs at a 45-degree angle, and the cinder block building looks like an appliance repair shop. But it’s hard to argue with a $1.99 huevos rancheros plate. Best taco: Huevos rancheros. 1015 Pleasanton Road, 210-390-1695, no web presence
Las Salsas: After a trainwreck trio of tacos here, I’d say there’s a reason they call it Las Salsas: You’ll need to drown your sorrows — and your tacos — in as much red and green as you can get your hands on. Best taco: Chilaquiles with bacon. 2018 San Pedro Ave., 210-732-5366, no web presence
