Sixteen, the Michelin two-star restaurant at Trump International Hotel & Tower, has a new executive chef chosen from within the ranks: Nick Dostal, who was chef de cuisine for nearly two years.

Dostal takes over from Thomas Lents, who left Sixteen last month for Detroit, where he will be in charge of food operations at the under-construction Foundation Hotel.

One of his goals is to build closer relationships with farmers, ranchers and fishmongers, he stated in a press release. He also wants to expand pairing options beyond wine.

Dostal will be working closely with pastry chef Evan Sheridan and sommelier Parag Lalit. Watch for his new menu in a few weeks.

Prior to joining Sixteen, Dostal worked at a number of prominent restaurants. Listed on his Facebook page: former cook at the Waldorf Astoria Chicago, former cook at Ria at the Elysian Hotel, former executive sous-chef at Grace Restaurant, former cook at Larkspur Restaurant in Vail, Colo., and former chef de partie at San Francisco’s Quince Restaurant.
